Ingredients

  • 2 ButcherBox® Salmon Fillets

    (about 6 oz each) 

  • 1 tbsp ButcherBox Anything Seasoning 

  • 1 cup cooked grains

    (quinoa, brown rice, or farro)

  • 1 cup baby spinach or arugula

  • 1/2 cup cherry tomatoes

    halved 

  • 1/2 avocado

    sliced 

  • 1/4 cup cucumber

    thinly sliced

  • 2 tbsp olive oil 

  • 1 tbsp lemon juice

    (plus wedges for serving)

  • Salt & pepper

    to taste

Preparation

Pat salmon fillets dry with a paper towel. Rub both sides with 1 tbsp olive oil and sprinkle with ButcherBox Anything Seasoning. Set it aside.

Halve the cherry tomatoes

Slice the avocado and cucumber

Rinse and dry the spinach or arugula

Reheat your pre-cooked grains in a saucepan over low heat or microwave until warm. Stir in a drizzle of olive oil and a pinch of salt.  

How to Cook

Heat a non-stick skillet over medium heat.

Place salmon skin-side down and cook for 4–5 minutes, then flip and cook for 2–3 minutes until it flakes easily with a fork.

Add warm grains to each bowl.

Top with spinach or arugula, tomatoes, cucumber, and avocado slices.

Place the salmon fillet on top.

Drizzle with lemon juice and finish with extra Anything Seasoning or pepper to taste.
