3 Quick Tips for Finger-Licking Tailgate Wings

In This Article

Crispy, finger-licking wings in under 30 minutes—because game day doesn’t wait for anyone.

Fall’s finally here, which means one thing for the football diehards: game day tailgate. And with tailgate comes snacks, and they better be tasty—because if the game goes south, at least the eating’s good. If you’re hosting, don’t let this intimidate you—we’re here to help you whip up delectable dishes that will have your pals wondering about your culinary prowess, all without spending hours in the kitchen. Let’s start with the crave-worthy dish that always scores points: chicken wings. These are surprisingly easy if you stick to our three simple tips, which skip timely marinades, sauces, and special fryers for a nearly effortless method that’s finger-licking good—exactly as they should be.

Best part? You’ll be done in under 30 minutes—just in time for kickoff.

Tip 1: Pat Them Bone Dry

This step is so simple you’re almost bound to skip it—but don’t. Chicken wings come out of the fridge covered in moisture, and all that moisture wants to do is prevent crispy skin. Water needs to evaporate before skin can start to brown, which means wet wings spend their first few minutes in the oven steaming instead of crisping. And steaming just turns the skin rubbery, no matter how hot your oven is or how long they bake. And nobody ordered rubbery wings.

Drying the chicken wings takes mere minutes. Pat them dry with paper towels on both sides until the skin looks matte instead of glossy. Only once you achieve this can you oil and season accordingly—this is the key to crave-worthy crispiness, we promise.

Tip 2: Go Right For The Rack

Putting the wings on a sheet pan feels like the obvious move, but it’s working against you. Wings sitting flat on a solid pan are only getting heat from above, meaning the top crisps and the bottom is a lost cause. This is where a rack saves the day.

After preheating your oven to 425°, stick the wings directly on a rack that fits inside your sheet pan. This way, air circulates evenly around each wing for a 360° crisp. Don’t have the right rack handy? Use your oven rack—just remove it prior to preheating and assemble the wings on your counter so you’re not sticking your fingers in a screaming hot oven. Prevent extra clean-up by putting your sheet pan on the rack below to catch drippings. Now you’re cooking to crispy—without the mess.

Tip 3: Flip Once

These will need about 30 minutes in total with very little effort from you except one critical step: flip them at the 15-minute mark. It’s tempting to open the oven every few minutes to check progress, but heat will escape every time you do so, which slows the process (and you’ve got a game to catch). One flip is enough to make sure both sides are evenly crisped. Set a timer, enjoy the pre-game show, and give them a quick turn when the alarm rings—you’re so close to perfection.

And After 30 Minutes?

Take them out, marvel at their golden, crispy deliciousness, and watch as your friends descend on them like hawks. Happy game day!
